You could guess. Or you could just ask.
The exchange
이거 두 개 중에 뭐가 더 촉촉해요? i-geo du gae jung-e mwo-ga deo chok-chok-hae-yo? "Between these two, which one is more moisturizing?"
촉촉하다 (chok-chok-ha-da) is the word Koreans use for that dewy, hydrated skin feeling. You'll see it everywhere on packaging and in reviews. It doesn't translate perfectly — "moist" is close but not quite right. Think of it as the opposite of tight or dry.
건조하시면 이 파란색 제품 추천드려요 geon-jo-ha-si-myeon i pa-ran-saek je-pum chu-cheon deu-ryeo-yo "If your skin is dry, I recommend this blue one"

The more specific you are, the better the recommendation. These are the most useful phrases:

가성비 (ga-seong-bi) — value for money — is one of the most useful words in any Korean store. Staff will always have an opinion on it.
At the tester station
Most Olive Young stores have a tester for every product on the shelf. Cotton swabs and wipes are usually provided nearby.
이거 테스터 있어요? — "Is there a tester for this?" 이게 제 피부 톤이랑 맞을까요? — "Will this match my skin tone?"
For foundation and cushion, staff will often help you find the right shade if you ask. Point at your face and say 제 톤에 맞는 거 추천해 주세요 — "Please recommend one that matches my tone."
